Easy Fourth of July treat to make with your kids

 


If your looking for an easy treat to make with your kids for the holiday weekend, look no further.  This only requires few items and some you may already have.   Kids love ice cream and sprinkles and I don' t know about your kids but mine love to make things with me in the kitchen.  
Items you will need: 
  • mini ice cream sandwiches
  • popsicle sticks
  • patriotic sprinkles
  • patriotic cupcake liners

Tasty Tilapia in a Pouch {Sass in the Kitchen}

Tasty Tilapia in a Pouch

Do you need a quick go to meal that is light and refreshing?? I happen to love fish in the summertime and this meal is so simple and delicious. I can usually whip this up pretty quickly and even my kids enjoy eating it. If you love fish, you should definitely 
give this one a try. 


Yes, this is what it looks like when it comes out of the pouch but trust me it tastes better than it looks!!

Ingredients
  • 2 pieces of parchment paper
  • 4 pieces of tilapia
  • 6 tbsp of butter
  • 2 pinches of pepper
  • 2 pinches of salt (I use kosher)
  • 2 large yukon gold potatoes
  • 1 large lemon (sliced thin)
  • 1 tbsp of chives
  • 1 tsp garlic powder
  • 1 tbsp of parsley
  • 1 tsp of lemon pepper seasoning
Preparation


Start by slicing your potatoes in thin slices. Put them in a pot of water and bring to a boil. After 4-5 minutes, drain the potatoes and rinse with cold water to cool them down. Now you are going to put the pouch together.
Take a piece of parchment paper and put a good layer of potatoes, then top it with a couple pats of butter. Sprinkle with chives and garlic powder. Next, put 2 pieces of tilapia on top of the potatoes. Sprinkle with lemon pepper seasoning, salt, pepper and parsley and top with 3 slices of lemon. You can also put another pat or 2 of butter on top of your fish if you like a lot and aren’t worrying about calories. I like to take the leftover lemon and squeeze the juice on top.
Fold the pouch up and seal it by folding the paper down. Put in the oven at 450 degrees for 12-15 minutes.

Garlic Buttermilk Mashed Potatoes {Sass in the Kitchen}



 Let me start by saying that these pictures aren't the prettiest but what can you do when your 6 yr old breaks your camera?  I recently made these for my co-workers for May birthdays celebration and they were a hit!!!  I doubled the recipe and served them in a crock pot to keep them warm.  
Warning!!!  These are NOT low calorie by any means but they are comfort food at it's finest.  Hope you enjoy!!


3lbs of Yukon gold potatoes
1 stick of salted butter
1/2 cup whole milk
1/2 cup of buttermilk
1 tbsp of minced garlic or more if your into that sort of thing
1 tbsp of kosher salt
1 tbsp of pepper (I used a combination of white pepper and black pepper) 


Start by peeling potatoes and roughly chopping them.  Add them to a pot of water and bring to a boil.  Boil until fork tender.  Remove and strain.  Warm milk, buttermilk and butter.  Add potatoes, milk, buttermilk, salt and pepper and butter to a bowl or stand mixer and whip until fluffy.  Serve hot.

Caterpillar Cake

I try to replicate just about anything into a cake.  I was recently given a task of doing a birthday cake for  a 3 yr old that was just like her favorite stuffed animal.  I love the way it turned out.
