Chicken Noodle Soup
2 cups cooked chicken
(I usually boil 2-3 chicken breasts for about 20 min or use a rotisserie chicken and pick off as much meat as you would like in your soup)
2 quarts chicken broth
1 medium white onion chopped
3 carrots peeled and sliced
3 celery stalks sliced
1 teaspoon poultry seasoning
1 teaspoon parsley
1 bag of egg noodles or kluski egg noodles
(Most of the time I use kluski noodles)
2 tablespoons butter
Salt and pepper to taste
In a large pot over med high heat, melt butter and add in chopped onion, carrot and celery. Cook veggies until onions are softened and a bit translucent. Add in poultry seasoning, salt and pepper. Next add the chicken broth and cooked chicken. Once chicken broth comes to a boil add in your noodles and cook for as long as they say on the package. If you are using kluski noodles, you may not use the whole bag. I usually use the whole bag of just regular egg noodles but it depends on what your family likes.
