Lunchbox love

My girls went back to school last week and the only request my middle daughter had was that she bring her own lunch.  I try to pack their lunches the night before and spend a little time on them. My oldest really doesn't care about having what I call lunch love but my 6 yr old just absolutely loves it.  I packed her a sandwich and some chips for the first day of school but I didn't stop there.




 Take a look at the sandwich I made.  I drew on the bread with edible markers and I am sure she was the talk of lunch when her friends saw this.  I also wrote on the outside of her chip bag.  It's the little things that matter the most for kids.  My daughter came home that day and raved about how her friends were all jealous of her lunch and that she loved me very much for the awesome lunch.

I guess it is all about "the little things".

Garlic Parmasean Chicken Wings







Garlic Parmsasean Wings 

4 Pounds Chicken wings and drummies 
1 cup panko bread crumbs
1 cup of parmasean cheese 
2 tablespoons of garlic powder
2 tablespoons of parsley
1 large gallon size zip lock bag 

Preheat oven to 425 degrees.  Bake chicken wings for 35-45 min.  Prepare in a plastic zip lock bag the bread crumbs, parm cheese, garlic powder and parsley.  Once wings cool down for about 10 min add the wings to the plastic bag and toss around until all wings are coated.  Spread wings on a cookie sheet and toast under the broiler for about 1-2 min.  Keep a close eye on them at this point.  Take out and let cool for 5 min before serving.

Pico de Gallo and fresh guacamole





I absolutely love fresh food.  There is nothing better than fruits and vegetables and I take full advantage of that in the summer time.  I guess my 6 yr old daughter has the same feelings because she was really excited when I took her to the fruit/veggie stand this past Saturday.  When we walked in I told her to grab some of her favorite fruits and then when I asked her what she wanted me to make for dinner all she said was please please make your guacamole.  In her words my guacamole is "to die for".  This makes me laugh because she is only six but I guess she gets her love for food from her momma.  I use my homemade pico de gallo in my guacamole recipe so I have posted both.  I hope you enjoy as much as my daughter does!



Pico De Gallo 
6-8 ripe tomatoes chopped (I used a mixture of garden and roma)
1 red onion chopped
A bunch of cilantro (you can use more or less, whatever tickles your fancy)
1 jalepeno diced 
2-3 cloves of garlic minced very fine 
1 lime squeezed
salt and pepper to taste

Guacamole 
3 avacados roughly chopped
4 tablespoons of pico de gallo 
1 lime squeezed
salt and pepper to taste
